I only found out about her real hair color from the online fandom. I don't think there are any official sources out there about her hair color or none I've found anyway.

I don't have any with me off the top of my head but I'll look around. I remember old Disney books about the making of the films would describe her dress as white or dove-grey. Some non-Disney making of books as well about film history in general.

Yes, I don't have any official knowledge on why they changed it.
But I can say two things - first, they have made her dress look blue in marketing all the way back in the first poster, so it was not just for VHS.
And two - I know the interior of the palace was originally gonna be blue, but they made it pink so Cinderella's blue dress would stand out more.
But her dress is only blue in the shadows, it's still silver when she first starts dancing with the prince, so...yeah, I guess they didn't want a dark gray dress in the shadows, so they made it blue in the shadows, so they had to make the rest of the palace pink.
